RECIPE: Ichigo (Strawberry) Sakura Matcha Sando

 

With eye-catching colors and stunning cross sections, it’s no wonder that fruit sandwiches have become a popular treat. While nowadays many specialty shops are selling them, they’re surprisingly easy to make at home. Featuring favorite springtime flavors like sakura and strawberry, these matcha fruit sandos are just as delicious as they are beautiful!



Servings: 2


Ingredients:

1 packet Sakura Matcha

● 5-6 pcs fresh strawberries (tops removed and cored if desired)

● 100ml (~½ cup) heavy cream or heavy whipping cream

● 15g (~1 Tbsp) sugar 

● 2 pcs white bread

● 1 pc kiwi fruit, peeled (optional)



Instructions:

1. Put the heavy whipping cream and Sakura Matcha powder together in a bowl. Place it over a larger bowl of ice water, whip with a whisk or electric hand mixer until it is about 70% stiff. Mix in the sugar and whip until stiff peaks form.


2. Spread matcha whipped cream on the white bread. Arrange the fruit diagonally across the bread. Spread whipped cream over the fruit to fill in any gaps. Place the other slice of bread on top and press lightly with your palm to spread the fruit and cream evenly.


3. Wrap tightly in plastic wrap and chill in the refrigerator for 1-2 hours. (This allows the cream to harden and bread to absorb the moisture, making it easier to cut cleanly.)


4. Remove the sando from the refrigerator and cut it in half diagonally.

Tip: You can cut it with or without the plastic wrap, whichever is easier for you. Heat the knife in hot water and wipe off any moisture before using it to cut.


5. Cut to your desired size, and it’s ready to serve!
